Zucchini, Mushroom, Pepper, Spinach Pizza

Ingredients

  • Zucchini
  • Sauteed mushrooms
  • Baby bell peppers
  • Baby spinach
  • Mozzarella cheese
  • Marinara sauce
  • Homemade pizza dough

Notes: I made this pizza for my Aunt Bev when she was visiting from Australia. She wanted a healthy pizza and that’s just what she got. It was light, summery, and fresh.

Ingredients

  • Breaded yellow squash (egg, bread crumbs, parmesan cheese, salt and pepper)
  • Mozzarella cheese
  • Homemade pizza sauce
  • Homemade pizza dough

Notes: Throughout my pizza adventures I’ve tried chicken parmesan and eggplant parmesan as pizza toppings. I prepared this pizza the same way. First, I cut the squash into bite sized pieces. Next I dipped the pieces in an egg wash, then in bread crumbs mixed with parmesan cheese, salt and pepper. I then baked the squash until it became crispy on both sides. I pre-baked the dough, spread on a thin layer of pizza sauce, sprinkled on mozzarella cheese and added the squash parmesan.

Ingredients

  • Roasted mole pepper
  • Diced hot pepper
  • Sun-dried tomatoes
  • Garlic marinated grilled chicken
  • Mozzarella and cheddar cheeses
  • Homemade pizza sauce
  • Homemade pizza dough

Notes: I make more pizzas than I have time to blog about. In fact, I made this pizza in the fall of 2011 with a mole pepper from The Good Food Collective and a hot pepper form our neighbors garden.

Ingredients:

  • Grilled, pulled pork chop
  • Sliced sweet peppers
  • Stonewall Kitchen Maine Maple Glaze
  • Mozzarella cheese
  • Homemade pizza dough

Note: I pulled the grilled pork chop with a fork and then tossed it in about a tablespoon of the maple glaze. After pre-baking the dough, I spread on a very thin layer of the maple glaze, then added the rest of the toppings. My maple glazed pork pizza was subtly sweet and was perfect way to end a cool autumn day.

  • Chopped butternut squash roasted in herbs and oil
  • Diced onion, roasted
  • Chopped, roasted cauliflower
  • White pizza sauce with oregano

Note: The vegetables were all from our Good Food Collective share. They were fresh and delicious, a little taste of autumn.

Hot Pepper, Potato, and Onion Pizza

Ingredients:

  • Sauteed hot pepper (wear gloves while chopping)
  • Sauteed onion
  • Roasted sliced potatoes
  • Mozzarella cheese
  • Homemade pizza sauce
  • Homemade pizza dough

Note: This pizza packed a lot of heat. Even though I wore gloves while chopping the onion, I still burned my eye when I rubbed it later. And I inhaled some of the fumes while chopping the pepper leading me to decide that wearing a face mask would have been a good idea.  The heat didn’t hit Andrew until he ate a lone pepper slice and then he tried using the crust to numb the burn. It was totally worth it though; the pizza was great!

Deep Dish Pizza Recipe

Deep Dish Pizza

Ingredients:

  • Italian sausage
  • Sauteed green pepper and onion
  • Fresh mozzarella cheese
  • Parmesan cheese
  • Marinara sauce
  • Homemade deep dish dough made with cornmeal

Note:

This was a special pizza. My brother-in-law, Matt, gave me a cast iron skillet for my birthday. I have been a little too intimidated to try using it myself so he offered to come do a cast iron deep dish pizza lesson. It was super easy to make and so much more delicious than my old method. The cast iron skillet cooks the dough to perfection, crispy on the outside, soft but not mushy on the inside. The cheese melted beautifully and stretched out into long strings. The ingredients tasted much more flavorful. Andrew and I agreed that we will be making many more cast iron deep dish pizzas in the future.

Watermelon Pizza Recipe

Ingredients:

  • Grilled watermelon
  • Asiago and mozzarella cheese
  • Balsamic reduction sauce
  • Homemade pizza dough made with fresh basil

Note: This week’s share from The Good Food Collective included so many fresh veggies that it was difficult to decide which to use on a pizza. So, I asked my Facebook followers for ideas. After seeing the picture of the choices a couple of friends suggested using the only fruit in the mix, watermelon! After hesitating a bit, I accepted the challenge. I added some fresh chopped basil to my usual dough recipe. Because I didn’t want the crust to be soggy, I only used a small amount of grilled watermelon to top the pizza. The balsamic reduction sauce was a first for my pizzas, but won’t be a last. All the flavors tasted great together. The basil in the crust was mild but noticeable. The balsamic sauce tasted wonderful with the cheeses. The watermelon held some of its sweet flavor and was delicious with the other ingredients. What I thought was a crazy idea turned out to be a fantastic pizza!

Note: The pizza was cooked on the grill. I don’t eat radishes often because they’re not my favorite veggie, but they tasted great on this pizza.
