#51: Eggplant Parmesan Pizza Recipe 9/12/10

It’s eggplant season so I decided to create an eggplant parmesan pizza recipe. Eggplant parm is one of my sister-in-law’s favorite meals so we invited Aimee, Joe and my nephew Avery over for lunch.

The Good Food Collective has included eggplant in our recent deliveries so we used it to make traditional eggplant parmesan. I spread marinara sauce on the dough, sprinkled on mozzarella cheese and added the eggplant parm. The eggplant was nice and thick so when we bit in we could still taste the flavor of the eggplant. This created a great taste when combined with the mozzarella cheese and marinara. Joe and Aimee really enjoyed this pizza and it’s definitely one I’ll make again.
