Buffalo chicken wings and pizza are two of the most traditional foods eaten on Super Bowl Sunday. It will come as no surprise to my regular readers that at my house we combine these popular football foods to create Buffalo chicken pizza.

Buffalo Chicken Macaroni and Cheese Pizza Recipe

Buffalo Chicken Mac & Cheese Pizza

Buffalo Chicken Pizza and Macaroni and Cheese Pizza are two of my most popular pizzas. What could be better?  Taking two great ideas and putting them together to create Buffalo Chicken Macaroni and Cheese Pizza. This was a fun pizza to make and to eat. The flavors from the cheese and the Buffalo chicken were distinct, but when combined tasted outstanding. Here’s how I did it.

I made my macaroni and cheese in one pot (using cheddar and pepper jack cheese). At the same time I marinated chicken in Wegmans Buffalo Wing Sause
in a pan with sautéed onions and celery. Then, I combined the two in the mac and cheese pot and left it on low heat. I spread the mixture on the pre-baked dough and let it bake for eight minutes on 450. Before serving, I drizzled Marzetti Light Chunky Blue Cheese Dressing on top of the pizza.

With the Buffalo Bills playing the San Diego Chargers at 4:15 today and Tyler coming for dinner, tonight presented a perfect opportunity to repeat one of my favorite pizzas: Buffalo Chicken Pizza. The pizza made my Top 10 list for 2010 and even though I pride myself in making a different pizza each week, I have made  it by request a few times since.

I started by grilling two chicken breasts, shredding it, and soaking it in a little bit of Wegmans Buffalo Style Wing Sauce. I spread a thin layer of wing sauce and blue cheese dressing onto the pre-baked dough. Lastly, I sprinkled on mozzarella cheese and then let it bake.

I’ve made this chicken wing pizza several times before and this was definitely the best. The chicken tasted great and there was just the right amount of spice in the sauce. Tyler, a local connoisseur of buffalo chicken pizza, said that this was the best he has ever had. Now that’s a win.

There are several family stories about how the snack came to be, but what’s certain is that Teressa and Frank Bellisimo’s creation was a hit. The classic mixture of butter, vinegar and cayenne pepper sauce is tossed with fried wings to create this finger licking food that is now enjoyed all across America.

Rather than going the traditional route of frying chicken wings, I chose to make my pizza recipe a little bit healthier by grilling chicken breast.  Then, I pulled the chicken with a fork and mixed it with a little bit of Anchor Bar Wing Sauce. After I pre-baked the dough I spread on about 1/4th cup of wing sauce, drizzled on chunky blue cheese dressing, sprinkled on mozzarella cheese and then topped it with the pulled chicken. After a short time in the oven the aroma of the pizza quickly filled the kitchen and our mouths started watering. The wing sauce along with the blue and mozzarella cheeses tasted delicious and had just the right amount of spice. My Buffalo Chicken Wing pizza recipe is one of my favorites and will make watching Buffalo Bills football games much more palatable.

#15: Big Blue Pizza Recipe 4/1/10

Continuing to branch out in my cheese selection, this week I took on blue cheese, the pungent cheese. Blue cheese is one of the few cheeses that Andrew does not like so I called on my friend Nicole to be my pizza guinea pig this week.

I did a little research on blue cheese and discovered there are many varieties, way more than I was aware of. The money saving cheese guy from Wegmans helped me pick out a tasty and affordable buttermilk blue cheese. This Wisconsin cheese is a three-time 1st place winner at the Wisconsin State Fair and two-time 3rd place winner at the World Dairy Expo so it must be good. I was feeling really adventurous this week and also included caramelized onions in this recipe. The onions didn’t get to the point of caramelizing, I wasn’t patient enough, but they did turn out quite good. Also included; a light sprinkling of mozzarella cheese, sautéed Granny Smith apple and baby spinach. The last topping to go on the pizza was the blue cheese.

After a few minutes in the oven, the pungent aroma quickly filled the kitchen and it was all you could smell once it was on the table. When I bit into a slice I could taste the other toppings, however the blue cheese was definitely the dominating flavor. The next time I use a strong cheese I will be sure to ease up on the quantity because a little goes such a long way, while a lot was way too much! Nicole, being such a supportive friend, took on the pungent pizza and said it was great! That’s true friendship!
