Macaroni and Cheese Pizza
In celebration of Valentine’s Day I took a week off from the cities pizza project to repeat a recipe from last year. A number of you will recall that Andrew’s only wish for Valentine’s Day in 2010 was for me to make a Macaroni and Cheese pizza. I was resistant at first, but it turned out to be one of my top ten favorites of the year. So, I decided to do a rare repeat in what might become Valentine’s Day tradition.
Regardless of how much I enjoy my first attempt at a pizza I always try to make improvements on my second attempt. This time, the only change I made was to include a quarter cup of Anthony Road Riesling to my mac and cheese recipe. The flavor of the wine combined with the onions, dijon mustard and cheeses resulting in an even better pizza than last year! My macaroni and cheese pizza was so mouth watering that I could not resist carbo loading on this fantastic Valentine’s Day treat!
Loaded Potato Pizza
Potatoes and pizza never would have crossed my mind. This recipe came from Andrew’s idea to turn our favorite meals into pizza. A simple dish I enjoy making is roasted red potatoes topped with the typical potato toppings so I tried turning it into a pizza tonight. I sliced the potatoes very thin and roasted them with Wegmans Basting Oil with Garlic and Herbs. I brushed the dough with the same basting oil, added scallions, Colby cheese, chopped broccoli, mild Italian sausage and the potatoes. We both really enjoyed it!

Macaroni and Cheese Pizza
This pizza recipe came directly from Andrew’s stomach. I make homemade macaroni and cheese at least once a year and it is awesome! When we started thinking of meals that I could turn into pizzas Andrew suggested a Macaroni and Cheese Pizza. I guffawed the idea thinking it would be too carbo-licious. I even Googled it and found it on a list called The Ten Worst Pizzas, Andrew however was persistent. Valentine’s Day was coming up so I considered making it then. Andrew then reminded me that it was the fifth anniversary of being matched with his “little brother” and asked if we could have him over for dinner that night. I decided with the combination of both special days I would attempt the Macaroni and Cheese Pizza. I used my own recipe titled “The Best Macaroni and Cheese Ever”, minus the wine since Andrew’s brother is only 15. I made and slathered it over the pizza dough, topped it with a little extra cheddar cheese and hoped for the best. I really had my doubts on this one but I should have trusted Andrew’s instinct, it was amazingly good! Probably not the healthiest pizza, but I do use spelt flour for the crust and I used wheat macaroni. I will definitely use this pizza recipe again.
