Four Cheese Pizza

Ingredients

  • BelGioioso Freshly Shredded Four Cheeses: Asiago, Fontina, Parmesan, and Provolone
  • Homemade pizza sause
  • Homemade pizza dough

It’s been almost two years since I made a four cheese pizza, and one year since I’ve eaten real dairy cheese. What a simple pizza recipe! The cheese combination was strong but tasty and went well with my homemade pizza sauce. I was so excited to eat my first real cheese pizza after a year without, that I only let the dough rise for 30 minutes when it really needs at least an hour. When it baked the crust didn’t get as fluffy as it usually does. Despite the slightly dry, flat crust it was a good pizza.

Ingredients:

  • Italian sausage
  • Sauteed onion
  • Sauteed banana pepper
  • Sauteed jalapeno pepper
  • Steamed broccoli
  • Fresh mozzarella cheese
  • Marinara sauce
  • Deep dish pizza dough

Note: I can’t really describe how awesome this pizza was. We couldn’t stop eating it. A special thanks to Matt for the cast iron skillet!

Squash Parmesan Pizza

Ingredients

  • Breaded yellow squash (egg, bread crumbs, parmesan cheese, salt and pepper)
  • Mozzarella cheese
  • Homemade pizza sauce
  • Homemade pizza dough

Notes: Throughout my pizza adventures I’ve tried chicken parmesan and eggplant parmesan as pizza toppings. I prepared this pizza the same way.¬†First, I cut the squash into bite sized pieces. Next I dipped the pieces in an egg wash, then in bread crumbs mixed with parmesan cheese, salt and pepper. I then baked the squash until it became crispy on both sides. I pre-baked the dough, spread on a thin layer of pizza sauce, sprinkled on mozzarella cheese and added the squash parmesan.

Andrew bought this sauce a while ago and has been waiting patiently for me to use it on a pizza. It was delicious! It was light and flavorful and tasted delicious with the veggies and cheeses. I’ll definitely use it again on pizza.

Deep Dish Pizza

  • Italian sausage
  • Sauteed green pepper and onion
  • Fresh mozzarella cheese
  • Parmesan cheese
  • Marinara sauce
  • Homemade deep dish dough made with cornmeal

Note:

This was a special pizza. My brother-in-law, Matt, gave me a cast iron skillet for my birthday. I have been a little too intimidated to try using it myself so he offered to come do a cast iron deep dish pizza lesson. It was super easy to make and so much more delicious than my old method. The cast iron skillet cooks the dough to perfection, crispy on the outside, soft but not mushy on the inside. The cheese melted beautifully and stretched out into long strings. The ingredients tasted much more flavorful. Andrew and I agreed that we will be making many more cast iron deep dish pizzas in the future.

Dill Crusted, Pickled Cucumber and Beet Pizza

Ingredients:

  • Pickled cucumbers (sliced, soaked in vinegar, sugar, and fresh dill)
  • Pickled golden beets
  • Homemade pizza sauce
  • Fresh parmesan and mozzarella cheeses
  • Homemade pizza dough with fresh dill and diced onions mixed in

Note: The beets and cucumbers tasted very sweet and complimented the onion, dill crust and cheeses very well. Dill crust is one of my favorite crust variations.

  • Sauteed red and white onion
  • Sauteed garlic
  • Basil
  • Asiago, Parmesan and Mozzarella cheeses
  • Homemade pizza sauce
  • Homemade dough

Note: The rapini, onions, garlic, and basil were fresh from The Good Food Collective. This pizza was delicious!
