Grilled Chicken, Daikon Radish, Corn, and Peppers Pizza

Ingredients:

  • Grilled teriyaki chicken
  • Grilled corn cut off the cob
  • Roasted Daikon radish
  • Roasted green bell pepper
  • Mozzarella cheese
  • Homemade pizza sauce
  • Homemade pizza dough

Note: The pizza was cooked on the grill. I don’t eat radishes often because they’re not my favorite veggie, but they tasted great on this pizza.

Grilled Corn, Summer Squash Pizza Recipe

Grilled Corn, Squash, Cilantro Pizza

Ingredients:

  • Grilled corn cut off the cob
  • Summer squash sauteed with fresh garlic
  • Fresh chopped cilantro
  • Mozzarella cheese
  • Homemade pizza sauce
  • Homemade pizza dough

Note: I grilled the dough on one side for four minutes, flipped and dressed the pizza, then grilled for about six minutes. The fresh toppings came from The Good Food Collective and our garden. Cilantro is not an ingredient I commonly use but it was delicious with the other ingredients.

Grilled Chicken, Spinach, and Onion Pizza

Ingredients

  • Grilled Chicken
  • Grilled Vidalia Onions
  • Chopped Spinach (fresh from the garden)
  • Mozzarella cheese
  • Vidalia Onion Fig Sauce (by Stonewall Kitchen)
  • Homemade pizza dough

In addition to grilling the toppings, both pizzas were cooked on the grill.

Grilled Sausage and Kale Pizza Recipe

One of the things Andrew and I look forward to eating in the summer is Italian sausage, topped with peppers and onions from the grill. While cleaning out the freezer this afternoon I found two sausage patties and some frozen kale. So, in place of peppers and onions (see Pizza #23 Fuggetaboutit Pizza) I decided to make a sausage and kale pizza.

First, I chopped the kale and sliced the onion, then sprayed them with a light coating of olive oil spray. Andrew grilled the veggies along with the Italian sausage, while I rolled out the dough. I sprayed one side of the dough, then laid it on my grill pan. We let the dough cook for four minutes, then flipped it. Next we added the toppings. I spread on marinara, sprinkled on mozzarella cheese, then Andrew added chopped Italian sausage, the kale and onion. We let it cook for about five more minutes, then brought it to the top shelf under the grill in order to let the cheese melt. The sausage tasted great with the kale and onions. This pizza was another success!

Grilled Chicken, Asparagus and Feta Pizza Recipe

Grilled Chicken Asparagus Feta Pizza

I can’t believe I have been making a pizza a week for almost 18 months, but never put asparagus on one. There have been a few times that it has crossed my mind, but it never seemed right. So tonight I set out to make a pizza with the primary goal of using asparagus.

I started by marinating chicken in a lemon garlic marinade. Then I placed a small amount of garlic and herb basting oil on some fresh asparagus. Andrew grilled the chicken and asparagus. Then I quickly chopped the toppings into bite sized pieces.  Next, we grilled the dough for four minutes, then flipped it over and topped the pizza. I spread a light coat of olive oil on the dough, then sprinkled on feta cheese, and lastly arranged the chicken and asparagus. We let the pizza grill for about 4-5 more minutes before taking it off the heat.

The flavors of the feta cheese along with the grilled chicken, asparagus and the crust combined so well and made this pizza taste amazing!

Grilled Sun-Dried Tomato Pesto, Chicken and Olive Pizza Recipe

We have been waiting to grill pizza all winter long, so we jumped at the opportunity this weekend.  After grilling the dough on one side for four minutes and flipping, we began dressing the pizza. First we slathered on store bought sun-dried tomato pesto, sprinkled on feta cheese, lemon garlic chicken and sliced kalamata olives. We let it sit for a few minutes to give the dough a chance to get nice and crispy and for the cheese to melt a bit. Once again, grilled pizza did not disappoint. The flavors of all the toppings on this grilled pizza really popped! I have a feeling we will be getting a lot of use out the grill this summer!

#50: Grilled Sun-Dried Tomato, Olive and Asiago Pizza Recipe 9/5/10

Tonight we wanted to hang onto the last bits of summer by grilling so I created my Grilled Sun-Dried Tomato, Olive and Asiago pizza recipe. Last week we had our date night at one of our favorite Italian restaurants, Boccacinis, and I had a pasta dish with an Asiago cheese sauce. It was delicious and it gave me the idea to use Asiago cheese on a pizza.

To go with the rich flavor of the Asiago cheese, I bought sun-dried tomatoes marinated in Italian seasonings and oil. Andrew requested Kalamata olives, which have become a staple in our cupboard, to top the pizza as well. I went with a marinara sauce so it wouldn’t overpower the flavors of the other ingredients. When the grill was hot we assembled the pizza and watched magic happen. The flavors went so well together and this pizza tasted amazing! If I had to compare my Grilled Sun-Dried Tomato, Olive and Asiago pizza recipe with one of similar taste status I would compare it with The Quagliata pizza. Both have strong flavors and surprising tastes, and both turned out to be outstanding pizzas!
