Dairy-Free Autumn Pizza

  • Applegate Organic Chicken & Apple Sausage
  • Roasted acorn squash
  • Roasted garlic
  • Sautéed mushrooms and onions
  • Teese Mozzarella Vegan Cheese
  • Homemade pizza sauce
  • Homemade pizza dough

Notes: I would never have imagined making a dairy-free pizza a year ago, but since I found out my daughter has a dairy allergy I’ve adopted a completely dairy-free diet. My pizza dough doesn’t contain dairy, but if you’ve being reading my blog for long you know I love cheese. Recently, I’ve started to experiment with dairy-free cheese. Non-dairy cheese will never compare to a fresh block of soft-ripened cheese, but I’ve come to appreciate the subtle flavors in vegan cheese. However, what made this pizza special was the roasted acorn squash. Combined with chicken and apple sausage, my dairy-free autumn pizza tasted like fall.

If you’ve had a good experience with a dairy-free cheese, please let me know because I am open to suggestions.

Ingredients

Notes: The 31st Annual Downtown Ithaca Apple Harvest Festival inspired this pizza. I picked up some fresh apples from the friendly students at Cornell Orchards and knew I had to make a pizza. After a quick stop at GreenStar Natural Foods Market for some organic ingredients I was ready to assemble. A light spread of Annie’s Goddess Dressing helped keep the dough from drying out. My husband said the flavors of the apples, onions, cheddar cheese, and sausage were an excellent combination.

Ingredients:

  • Grilled, pulled pork chop
  • Sliced sweet peppers
  • Stonewall Kitchen Maine Maple Glaze
  • Mozzarella cheese
  • Homemade pizza dough

Note: I pulled the grilled pork chop with a fork and then tossed it in about a tablespoon of the maple glaze. After pre-baking the dough, I spread on a very thin layer of the maple glaze, then added the rest of the toppings. My maple glazed pork pizza was subtly sweet and was perfect way to end a cool autumn day.

  • Chopped butternut squash roasted in herbs and oil
  • Diced onion, roasted
  • Chopped, roasted cauliflower
  • White pizza sauce with oregano
  • Mozzarella cheese
  • Homemade pizza dough

Note: The vegetables were all from our Good Food Collective share. They were fresh and delicious, a little taste of autumn.

Broccoli and Cauliflower Pizza

The winter  solstice is next week so this broccoli and cauliflower pizza recipe will be my last fall pizza of the season. I was motivated to try cauliflower on a pizza because it is in season and I have yet to include it as a topping on a pizza.

I roasted cauliflower and broccoli florets in some of my favorite garlic and herb basting oil. After pre-baking the dough I spread on my homemade sauce, mozzarella and parmesan cheeses. Then, to give it a kick, I sprinkled on crushed red pepper.

The roasted cauliflower and broccoli tasted wonderful with the heat from the crushed red pepper. And the cheeses and pizza sauce complimented these flavors well. This broccoli and cauliflower pizza tasted great and was an excellent way to wrap a season of fall pizza recipes.

Buffalo Chicken Pizza Recipe

Buffalo Chicken Pizza

With the Buffalo Bills playing the San Diego Chargers at 4:15 today and Tyler coming for dinner, tonight presented a perfect opportunity to repeat one of my favorite pizzas: Buffalo Chicken Pizza. The pizza made my Top 10 list for 2010 and even though I pride myself in making a different pizza each week, I have made  it by request a few times since.

I started by grilling two chicken breasts, shredding it, and soaking it in a little bit of Wegmans Buffalo Style Wing Sauce. I spread a thin layer of wing sauce and blue cheese dressing onto the pre-baked dough. Lastly, I sprinkled on mozzarella cheese and then let it bake.

I’ve made this chicken wing pizza several times before and this was definitely the best. The chicken tasted great and there was just the right amount of spice in the sauce. Tyler, a local connoisseur of buffalo chicken pizza, said that this was the best he has ever had. Now that’s a win.
