Dairy-Free Autumn Pizza

Notes: I would never have imagined making a dairy-free pizza a year ago, but since I found out my daughter has a dairy allergy I’ve adopted a completely dairy-free diet. My pizza dough doesn’t contain dairy, but if you’ve being reading my blog for long you know I love cheese. Recently, I’ve started to experiment with dairy-free cheese. Non-dairy cheese will never compare to a fresh block of soft-ripened cheese, but I’ve come to appreciate the subtle flavors in vegan cheese. However, what made this pizza special was the roasted acorn squash. Combined with chicken and apple sausage, my dairy-free autumn pizza tasted like fall.

Ingredients

  • Zucchini
  • Sauteed mushrooms
  • Baby bell peppers
  • Baby spinach
  • Mozzarella cheese
  • Marinara sauce
  • Homemade pizza dough

Notes: I made this pizza for my Aunt Bev when she was visiting from Australia. She wanted a healthy pizza and that’s just what she got. It was light, summery, and fresh.

New York Style Pizza Recipe

Finding out what food cities are famous for and turning those foods into pizza has been a fun adventure so far this year. When I think of New York City I think of pizza. So for this week I decided to make my own New York style pizza. I have the same memory from each of my visits to the Big Apple: walking down the street while eating a thin crust traditional New York style slice. I can still feel the grease trickle from a folded slice down my wrist and to my elbow.

To begin, I rolled my dough thinner than usual, then pre-baked it. Next, I spread on a layer of sauce and fresh mozzarella cheese. Last I covered the pizza with the toppings. This week I used capicola, baby bella mushrooms, spinach and roasted red peppers because they taste great together and offer a healthy alternative to some of my most recent pizza creations. After the pizza was done baking I sliced it and we dug in. The veggies were fresh and tasted great with the capicola and mozzarella cheese. My New York style pizza recipe didn’t include the grease, but it was a delicious alternative to the Big Apple’s famous food.

 

#47: Mushroom, Tomato and Onion Pizza Recipe 8/26/10

Tonight we had two special guests over for dinner, Andrew’s boss Barry and his wife Chris. Barry and Chris are very health conscious so I put together a healthy plan for two pizzas. The first being my Mushroom, Tomato and Onion pizza recipe.

Typically, I roll my pizza dough very thin but I managed to get the dough super thin on this pizza. I spread on marinara, tossed on low-fat mozzarella cheese, sautéed onions and mushrooms. Then I finished it off with cherry tomatoes from my mom’s garden. The pizza turned out delicious, but check out my pizza #48 to learn about the winning pizza recipe of the night.

#44: Summer Veggie Pizza Recipe 8/20/10

In addition to preparing a special pizza for my Uncle Oak I prepared a pizza recipe with my Aunt Bevy in mind. Bev loves fresh vegetables so I decided to create a summer veggie pizza recipe that would be light and fresh.

My mom brought cherry tomatoes and basil from her garden. I sautéed baby portabellas and scallions in a pan with canola oil. After I spread on a thin layer of marinara I sprinkled on freshly shredded Fontina cheese and then the toppings.  Rather than use the pizza stone, I prepared the summer veggie pizza recipe to bake on a metal pan, which resulted in a light and fluffy crust. This pizza was delicious and tasted very fresh and healthy.

#18: Shroom and Zuke Pizza Recipe 4/19/10

Mushroom and Zuke Pizza

Spring break, woo hoo!!! I’m spending it by taking care of appointments, visiting with friends and making pizza. Tonight my friend Amber came over to catch up and be my guinea pig for a pizza Andrew wouldn’t touch. Andrew hates mushrooms so I haven’t had the chance to use them as a topping, and having never cooked mushrooms I was really looking forward to trying it. Luckily, Amber said she loves them so they are a key ingredient of tonight’s pizza recipe. I sliced the shrooms and two small zucchinis, then sautéed them with oil and garlic. The topping combo was placed on top of marinara sauce and the fresh mozzarella cheese I used over the weekend. My first attempt to cook mushrooms was a success, this pizza tasted great! Amber seemed to enjoy the pizza as well. I offered to send her home with leftovers but was not offended when she declined because that means I will get to enjoy this pizza again tomorrow!
