#25: Hummus and Roasted Veggie Pizza Recipe 5/29/10

Almost half way to my goal of 52 pizzas I still love the challenge of creating a non-traditional pizza without marinara. So after I made White Bean Pizza #21 I was really looking forward to my Hummus and Roasted Veggie Pizza recipe. The most common way to enjoy hummus is as a dip with veggies or on a wrap, but of course I thought, “Why not on a pizza?” Tribe is our brand of choice, and for this pizza I used the cracked chili pepper hummus because it has a little kick. One lesson I learned from making my White Bean pizza was that beans hold in heat when baked and a thin layer holds a lot of flavor. So to avoid burning my mouth again, I spread the hummus on pretty thin. Then I sprinkled on mozzarella cheese, and finished topping this tasty pizza with roasted zucchini, onion, and red pepper. I definitely recommend this pizza to anyone interested in trying looking for a healthier pizza or just something different!

#18: Shroom and Zuke Pizza Recipe 4/19/10

Mushroom and Zuke Pizza

Spring break, woo hoo!!! I’m spending it by taking care of appointments, visiting with friends and making pizza. Tonight my friend Amber came over to catch up and be my guinea pig for a pizza Andrew wouldn’t touch. Andrew hates mushrooms so I haven’t had the chance to use them as a topping, and having never cooked mushrooms I was really looking forward to trying it. Luckily, Amber said she loves them so they are a key ingredient of tonight’s pizza recipe. I sliced the shrooms and two small zucchinis, then sautéed them with oil and garlic. The topping combo was placed on top of marinara sauce and the fresh mozzarella cheese I used over the weekend. My first attempt to cook mushrooms was a success, this pizza tasted great! Amber seemed to enjoy the pizza as well. I offered to send her home with leftovers but was not offended when she declined because that means I will get to enjoy this pizza again tomorrow!

#5, 6, 7: Party Pizza Recipe 2/6/10

We decided to have some friends over for pizza and other snacks. The next three pizzas were made for that night.

#5 Margherita Pizza

I figured I should make the old stand-by, marinara and cheese. It turned out to be a hit.

#6 Meat Lovers Pizza

This is a pizza I have made for Andrew and I before so I knew it would be great. I used poultry Italian sausage, turkey pepperoni, sautéed onions, marinara and mozzarella cheese. I was right, it was great.

#7 Cheese-less Roasted Veggie Pizza

One of our friends is lactose intolerant, I can’t even imagine because I love cheese so much. I have seen him eat cheese before but I wanted to check with him to see what he could eat. He said melted cheese was the worst, I pity him so much because I love melted cheese the best! I was kind of excited for the challenge of a cheese-less pizza, I have never attempted it before due to my cheese addiction. I roasted red peppers, something I learned to do earlier in the week. I also roasted some onions and sautéed zucchini. I brushed Wegmans basting oil with garlic and herbs on the crust and added the veggies. This pizza turned out to taste great and our lactose intolerant friend was grateful and satisfied with my creation. I was disappointed that the veggies did not stay on the pizza after I sliced it and they fell off when you tried to eat it. The challenge is how do you get the veggies to stay on the pizza without cheese? I will attempt that challenge again sometime.
