Zucchini, Mushroom, Pepper, Spinach Pizza

  • Homemade pizza dough

Notes: I made this pizza for my Aunt Bev when she was visiting from Australia. She wanted a healthy pizza and that’s just what she got. It was light, summery, and fresh.

Sausage and Peppers Deep Dish Pizza

The ingredients I used for this deep dish pizza are some of my all time favorite. I thoroughly enjoyed this recipe and will definitely repeat it in the future. I rolled out, then pressed deep dish pizza dough (1 cup cornmeal substituted for 1 cup flour) into a round pie pan that had been sprayed with canola oil and sprinkled with cornmeal. Pre-baking the dough takes about 7 minutes since it is pretty thick. After pre-baking, I layered mozzarella cheese, Italian sausage, green peppers, onions and pizza sauce in the pan. The thickness of the pizza causes the it to take longer to bake, so I baked it for about 20 minutes.

Imagine RIT Pizza

In what can now be considered an annual tradition, I prepared a special pizza to celebrate Imagine RIT: Innovation & Creativity Festival, which will be held on the RIT Campus tomorrow between 10:00 am and 5:00 pm.

Andrew and his student’s Lauren and Ashley are doing some final planning for the event this evening so I got busy preparing them a pizza. I started by slicing red, yellow and orange peppers. My experience making this pizza last year taught me to slice the bell peppers with the logo in mind so it is easier to form. After pre-baking the dough I spread on minced garlic and olive oil, sprinkled on mozzarella cheese and then began the artistic part of making the Imagine RIT logo with the peppers.  I was very careful when slicing the peppers and the logo was much more manageable this time around. After I was satisfied with the image Ibaked the pizza for about ten minutes and hit the road to RIT. I hope Andrew, Lauren and Ashley enjoy my Imagine RIT pizza and I hope to see you all at the festival tomorrow!

#42: Chili Queso con Carne Pizza Recipe 8/16/10

Tonight we had a repeat guest, but not a repeat pizza. Steve has shared several of my pizzas, including one of our favorites, Moe’s pizza. Well tonight’s pizza recipe definitely topped it. I sautéed ground beef with Worcestershire sauce and red onion, inaddition to creating the most delicious queso dip I have ever tasted. First, I roasted jalapeño, Serrano and Poblano peppers. Then I mixed in vinegar, honey, olive oil, salt and pepper. Meanwhile, I melted Monterey Jack cheese in some other goodies and mixed the whole thing together. I spread a thin layer of marinara sauce on the dough, poured the queso dip on and sprinkled the burger mixture on top of that. The pizza was so delicious! Super un-healthy but worth it because it tasted so good.

#20: Imagine RIT Pizza Recipe 4/30/10

Imagine RIT Pizza

Tonight Andrew is doing the final planning for Imagine RIT: Innovation and Creativity Festival which will be held at Rochester Institute of Technology, Saturday May 1 from 10:00am-5:00pm. As he and several of his right-hand men/women are getting prepped for tomorrow, I was inspired create an Imagine RIT pizza recipe. To represent the colors of the Imagine RIT logo I used white mozzarella cheese, yellow and orange peppers sliced in roundish pieces, and red pepperoni. I then attempted to lay out the toppings in a similar fashion as the logo. This was slightly challenging due to the shape and texture of the toppings, but I think it looks pretty good compared to the image. I’m sure that Andrew and his comrades are in need of a delicious dinner break so I’m off to deliver this Imagine RIT pizza to campus. I hope to see you at the festival!
